Ingredients
- 2 tbsp AvoFresh ‘Smashed Avocado’
- 650 g baby potatoes, cut into 1″ slices
- 100 g diced bacon
- 3 tbsp sour cream
- Fresh chilli, to garnish
- Fresh coriander, to garnish
- Salt and pepper, to taste
Instructions

Preheat oven to 180°C. Place chopped potatoes in a single layer onto a tray with baking sheet and lightly coat with olive oil and salt.

Place into oven and bake for 20 minutes. Add diced bacon and return to oven for 20 minutes, or until golden. Leave to cool.

In a large bowl, add cooled potatoes and bacon. Mix in AvoFresh ‘Hint of Lemon’ and sour cream. Gently toss to combine.

Garnish with fresh chilli and coriander to serve.
