Description

Ingredients
- 1 AvoFresh Smashed Avocado Tub
- 500 g salmon fillets
- 2 cups brown rice
- 2 carrots
- 1 radicchio lettuce
- 400 g hanabi soybeans
- 1 bunch of spring onions
- Black sesame seeds, to garnish
- Soy Sauce, to taste
- Salt and pepper, to taste
Instructions

Boil 5 cups of water in a medium sized saucepan. Add 2 cups of brown rice and leave to simmer for 35 mins. Turn off and leave the rice covered to steam for a further 10 mins.

Cut raw salmon fillet in bite-size cubes. Prep vegetables by grating the carrots and finely slicing the lettuce and spring onions.

Add rice to bowl as a base. Top with salmon cubes, Smashed Avocado, lettuce, carrot and beans.

Garnish with spring onion and sesame seeds. Season with soy sauce and salt and pepper, to taste. Enjoy!
